Method

  • Organic cultivation

For us, wine is nature, and as such, it must follow all its nuances, as free as possible from chemical and technological interference. That's why we cultivate in total absence of systemic or herbicidal products, and vineyard management is as manual as possible.

  • Spontaneous fermentation

Even the passage of time contributes to structuring the soul of a wine. And we don't want to rush it. We follow the vine's timing with thinning carried out in multiple passes, which facilitates spontaneous fermentations, capable of giving a more genuine and frank product.

  • Space for experimentation

Respecting the land and the plant, we are not afraid to experiment. We use containers of different materials and capacities, macerations with variable durations, with or without stems. These are just some of the aspects that each year contribute to the bouquet of our wine, always a child of the vintage, and which over time becomes an increasingly expressive red wine from the Dolomites.
